Wooooo-eeeeee, these are some sweet cookies! If you've never had Dulce de Leche, you are missing out. It's basically caramelized condensed milk, cooked until it's thick and sweet, like the best caramel you have ever had. I had to restrain myself from eating spoonfuls of it straight from the can.
The dulce de leche is mixed into the batter and sandwiched between two fully baked cookies, for a double-punch of sweet caramelized flavor. I really loved the cookies themselves, without the sandwiched filling. That was a little too much sweetness for me. Alone, these cookies are buttery and soft, with an almost burnt-sugar undertone.
